Mushroom Pasta
Mushroom Pasta
Makes: 4 Servings
Ingredients:
4 Cups Fresh Mushrooms - Sliced
1/2 Purple Onion - Diced
2 Tablespoons Dry Sherry
1 Cup Vegetable Broth
1/2 Cup Soy Milk
1 Tablespoons Mustard
2 Cups Pasta
1 Tablespoon Flour
Directions:
1. Add small amount of liquids to a saucepan & heat on a low flame.
2. Add vegetables and saute until tender.
3. Add broth & bring to a boil.
4. Mix in remaining ingredients (other than pasta), cover with a lid & simmer for 10-15 minutes.
5. Cook pasta in a pot.
6. Add pasta to vegetables and spices & serve.

Makes: 4 Servings
Ingredients:
2 Russett Potatoes - Diced
1 Cup Water
1 Teaspoon Dried Parsley
2 Tablespoons Butter
1 White Onion - Sliced & Diced
1 1/2 Tablespoons Vegetable Oil
2 Cups Rice/Soy Milk
4 Celery Stalks - Diced
Salt & Pepper
Directions:
1. Saute vegetables with oil in a saucepan for up to 5 minutes.
2. Remove vegetables & add to a large pot with water.
3. Boil water & add spices.
4. Stir.
5. Cover with lid & simmer on a low flame.
6. Serve when vegetables are soft.

Roasted Garlic French Bread
Roasted Garlic French Bread
Makes: 2 Servings
Ingredients:
6 Cloves Of Garlic - Crushed
2 Teaspoons Butter
Toasted French Bread
Directions:
1. Slice french bread in half.
2. Spread 1 teaspoon of butter over one half.
3. Apply 3 cloves of crushed garlic to each half.
4. Bake in oven until bread is crisp and browned.
